Elsa Carrillo, MS, RDN, is a registered dietitian nutritionist helping patients manage their diabetes.

Elsa earned her bachelor’s degree in international development studies with an emphasis in Sub-Saharan Africa and Latin America at the University of California, Los Angeles. After completing her bachelor’s degree, Elsa served as a Peace Corps volunteer in Burkina Faso (Sub-Saharan Africa), where she worked with local stakeholders, women, and girls to create school retention and empowerment programs, and a woman’s wellness group where she led nutrition workshops, trained village women to grow local sustainable foods with rich nutritional value, and conducted food preparation demonstrations.  Elsa’s work around nutrition and health while in the Peace Corps inspired her to pursue a master’s degree in nutrition. Elsa attended the University of Southern California to earn a Master of Science in nutrition, healthspan, and longevity.

While completing her master’s degree, Elsa completed multiple clinical rotations and internships. While completing her community and nutrition education rotations at L.A. Kitchen and with USC University Center for Excellence in Developmental Disabilities, Elsa presented on federal and state food assistance programs, created a policy brief with recommendations to include into the Child Nutrition Reauthorization Act Amending the Richard B. Russell National School Lunch Act to her congressional representative.

Elsa then completed a food service rotation at Glendale Memorial Hospital Health Center at the USC Norris Cancer Hospital. At Keck Medical Center’s weight-management outpatient clinic, Elsa completed a clinical rotation where she helped conduct nutritional assessments, provided patient-centered nutritional counseling, and developed educational materials on carbohydrate-friendly snacks for patients with uncontrollable diabetes and obesity.

As an active member of the health care community, Elsa is a member of the Academy of Nutrition and Dietetics, California Academy of Nutrition and Dietetics Fresno District, Diabetes Care and Education DPG, and Dietitians in Integrative and Functional Medicine DPG.
